Not porridge: what to cook with buckwheat and liver for a hearty and quick dinner in 15 minutes
Buckwheat and liver are very useful and valuable products for preparing tasty and light dishes for lunch and dinner.
Buckwheat can also be used to make delicious soup, buckwheat pancakes, salads, and milk cereals.
The cook shared a recipe for delicious buckwheat pancakes with chicken liver and carrots on Instagram.
Ingredients:
- chicken liver – 500 g
- buckwheat groats – 0.5 cups
- chicken eggs – 2 pcs.
- onions – 2 pcs.
- carrots – 1 pc.
- garlic – 1 clove
- wheat flour – 4 tbsp
- sunflower oil – 75 ml
- salt – 1 tsp.
- ground black pepper – 0.25 tsp.
- parsley – 2-3 sprigs
Method of preparation:
1. Wash the buckwheat, and boil over low heat until tender. Dice one onion and fry it.
2. Wash the chicken liver, remove the veins, and pass it through a meat grinder with a fine grating. In the same way, chop the boiled buckwheat and sautéed onions, add them to the liver along with the garlic, and add 2 eggs, flour, salt, and black pepper to the mixture to taste. Stir the dough for the buckwheat pancakes. The consistency should resemble pancake dough.
3. Put a small amount of dough into a frying pan with heated oil with a tablespoon, forming small round buckwheat pancakes. Fry them over medium heat until golden brown on both sides.
Tip: You can pour water over the buckwheat pancakes and simmer them for 15-20 minutes under a lid over low heat!
